Ingredients
- 1kg new potatoes
- 1 Spanish onion
- 2 garlic cloves
- 1 red chilli
- Cayenne pepper and/or smoked paprika
- Can of chopped tomatoes
- 300g chorizo
- Olive oil
Instructions
- For the sauce fry up the chopped onion, garlic and chilli in the oil until the onion is translucent. Add a pinch of cayenne and/or paprika to taste. Add the tomatoes, season and gently cook down for about 15mins.
- Boil the potatoes, halved or quartered, for 10mins.
- Whilst they are cooking, gently fry the chorizo. It will release its lovely, red oil.
- Add the potatoes to the chorizo and cook until they start to brown.
- Pop them into a bowl and pour the sauce over.
- Serve with salad and good bread to soak up the juices.
